Zusammenfassung

Ballaststoffe finden sich vornehmlich in Gemüse, Obst, Getreide und Hülsenfrüchten. Für die Menschen sind sie unverdaulich. Ihr hoher Faseranteil ist aber unentbehrlich für eine normale Darmtätigkeit, denn durch Wasseraufnahme quellen sie auf und bewirken eine Anregung der Darmmotorik. Die Kontaktzeit von Schadstoffen mit der Darmwand ist dadurch verkürzt. Die Ballaststoffe binden außerdem Cholesterin und Gallensäuren und beeinflussen positiv unsere Bakterienflora im Darm (Kap. 37).
