Zusammenfassung
Der Verlust der Muskelmasse, verbunden mit Schwäche und erhöhter Stickstoffausscheidung stand schon im 19. Jahrhundert im Zentrum der Beobachtungen bei schweren Krankheiten. Am Anfang des 19. Jahrhunderts wurde erkannt, dass eine Proteinzufuhr essenziell für die Erhaltung des Lebens ist. Hunde, die nur mit Mehl (als Kohlenhydratquelle) und Öl (als Fettquelle) ernährt wurden, starben. Erst die Ergänzung der Nahrung mit Eiern oder Käse ermöglichte eine normale Wachstumsrate. Durch die Untersuchungen von Rose und durch die Einführung der parenteralen Ernährung wurde erkannt, dass die Essenzialität in den Proteinbausteinen, den Aminosäuren, beheimatet ist. Im Nahrungsprotein liegen alle 20 Aminosäuren vor, die für die endogene Proteinsynthese benötigt werden. Aus diesem Grund sind der Protein- und Aminosäurenstoffwechsel sehr eng miteinander verbunden.
