Zusammenfassung
Bedingt durch neue Erkenntnisse über die Rolle der Ernährung in der Prävention chronischer Erkrankungen befindet sich die ernährungswissenschaftliche und ernährungsmedizinische Forschung gegenwärtig in einer Phase der Neuorientierung. Aktuelle Arbeiten belegen, dass zahlreiche Lebensmittelinhaltsstoffe nicht nur sog. »nutritive« Eigenschaften (z. B. als Energiesubstrat, als Stickstofflieferant oder als essenzielles Substrat) aufweisen, sondern additive »pharmakologische« Effekte besitzen. Eine adäquate Zufuhr dieser Nährstoffe mit »added value« soll das Risiko für Gefäßkrankheiten, Krebs und anderen chronische Erkrankungen vermindern [1, 24]. In der Therapie soll die Aufnahme sog.»bedingt unentbehrlicher Nährstoffe« die Genesung unterstützen.
