Zusammenfassung

Verschiedene Mineralien werden zu mehr als 250 mg je Tag aufgenommen, darunter Natrium, Chlorid, Kalium, Kalzium, Phosphat und Magnesium. Weniger als 20 mg je Tag werden von Chrom, Kupfer, Fluor, Jod, Eisen, Mangan, Molybdän, Selen und Zink benötigt. Jedes dieser Elemente trägt weniger als 0,01 % zum Körpergewicht bei. Die so definierten Spurenelemente werden als Kofaktoren oft im katalytischen Zentrum von multiplen Enzymreaktionen benötigt. Der genaue Bedarf an Mikronährstoffen (Vitamine und Spurenelemente) ist bereits bei Gesunden nur ungenügend bekannt. Oft spiegeln die gemessenen Konzentrationen in Serum oder Plasma nicht Konzentrationen in den Zellen oder Organen wider. Die Deutsche Gesellschaft für Ernährung (DGE) empfiehlt daher eine Mindestmenge an Vitaminen und Spurenelementen, die täglich mit der Nahrung zu sich genommen werden soll, damit Gesunde nicht einen mikronährstoffbedingten Mangel erleiden.
