Zusammenfassung
Die Bedeutung von Lipiden und Fettsäuren im Organismus ist aufgrund ihrer Multifunktionalität hoch. Neben den Aufgaben als kompakte Energieträger und Transporter für die fettlöslichen Vitamine A, D, E und K, beeinflussen sie maßgeblich die Membranfluidität, sowie die Aktivität von Membranrezeptoren und von Signalwegen. Entsprechend kann durch die Auswahl bestimmter Lipide und Fettsäuren auf immunologische Abläufe auch therapeutisch Einfluss genommen werden (Heller 2008). Neben Modifikationen in der Synthese von Prostaglandinen, Leukotrienen und Lipoxinen kann die Auswahl von Fetten auch ein günstiges Profil von Resolvinen und Protektinen hervorrufen sowie auf die Genregulation antihyperinflammatorisch einwirken (Adolph et al. 2009; Heller 2008).
