Eisen ist als Spurenelement ein essenzieller Nahrungsbestandteil, der für die Aufrechterhaltung des Zellmetabolismus und der aeroben Atmung unentbehrlich ist. Die notwendige exogene Zufuhr von Eisen ist Voraussetzung für eine ausreichende Erythropoese. Auch als Coenzym und Katalysator lebenswichtiger biochemischer Reaktionsabläufe ist Eisen für den humanen Organismus unverzichtbar
